Our cuvées are made to be drunk, not locked away — by candlelight, in small company, with a good meal. The Sarabande, the heart of the suite, unfolds slowly over the hours.

Wine as music

Each cuvée a movement of its own.

As in a suite, each of our cuvées has its own voice, equal in standing and with a place of its own, without hierarchy. And music remains more than a metaphor: classical recordings play among the vines, and we invite young musicians to give concerts at the domaine.

The domaine

Five hectares of vines, set within a living whole.

Woodland, meadows and water surround the vines, 19 hectares, protected as a Site Classé since 1975. This diversity keeps the place in balance. Marc Ruhland-Seidel runs the domaine himself, in small quantities, on site.

For decades this estate was the domaine of Jean Ribéreau-Gayon, one of the co-founders of the Institute of Oenology in Bordeaux and of modern wine science. A legacy like this is not something you own — you try to live up to it. We measure every vintage against it.

Released when the wine is ready to drink.

Our wines only go on sale once they have reached their peak. We carry the ageing risk, not you. This exactness has a tradition here: for decades, Aux Conseillans was the domaine of Jean Ribéreau-Gayon, one of the co-founders of modern oenology.

In the coffret

Three wines, three voices.

The whole idea in a single evening: a red overture, a red centrepiece and a white in a different voice.

Gigue 2016 — the overture

Opens the reds: juicy cherry, violet, a touch of white pepper. Powerful and rich in tannin, yet kept nimble by its fruit. With grilled dishes, duck and braises.

Sarabande 2015 — the centrepiece

Black cherry, plum, graphite, cocoa. Dense and precise, with a long, quiet finish, aged 18 months in barrique. With game, braised beef and coq au vin.

Louré 2024 — the other voice

A Sauvignon Blanc that barely tastes of Sauvignon Blanc — aged in the clay amphora, closer to Sancerre. An enveloping texture, a quiet length. With poultry, veal and richer fish.

Good to know

What drinking window are the three wines in?

Sarabande 2015: 2025 to 2032. Gigue 2016: until around 2035. Louré 2024: 2026 to 2040. All three are at their peak now — you can open them or lay them down further.

How were the three cuvées aged?

Sarabande, 18 months in barrique, in the classic Right-Bank manner. Gigue, mostly in concrete tank with a small share of barrique, built for fruit and freshness. Louré, in the oval clay amphora on its lees — a Sauvignon Blanc that deliberately refuses to be one.

Why does the wine come directly from the domaine?

The shortest chain, seamless provenance. The bottles leave our cellar carefully temperature-controlled and insured — you receive them in the same condition in which they rested with us. No intermediate storage, no uncertain origin.

Can I reorder single bottles or larger formats?

Yes. Each cuvée is also available on its own, and many vintages additionally as magnum, up to the Balthazar. The coffret is the entry point, not the limit.

How do I store the wines — and how long will they keep?

Cool, dark, lying down. The two reds will easily keep a decade and more; the Louré is unusually age-worthy for a white, until around 2040.

Who was Jean Ribéreau-Gayon?

Aux Conseillans was his domaine for decades — he was one of the co-founders of modern oenology. Today we continue to work the vineyard in the same tradition of scientific precision.
