The Repertoire

Our Repertoire

Each wine is inspired by a movement of the musical suite and bears its name – each vintage a movement of its own.

Climate & Character

Five hectares of vines across sixteen plots, each vinified separately, plus Sauvignon Blanc from leased sites in the neighbourhood.

At LaSuite aux Conseillans we think more in terms of Burgundy's climats than the usual Bordeaux order: every plot, every site may find its own expression. That is why we have no first and second wine and no ranking of quality. As in a suite, only the whole makes a complete work.

The Prélude is a rosé from Malbec, fermented directly in large barrique and aged in it. In every vintage so far, the Sarabande has brought together all four of the estate's red varieties from seven plots in one bottle. And the Louré rests so long in oval clay amphorae that what remains of the usual Sauvignon sharpness is a calm, gastronomic texture. Each of our wines has a character of its own, recognisable across the vintages, and its own place in the composition of the estate.

We work on a small surface and deliberately in small quantities. From several clearly distinct terroirs we draw out wines that each remain recognisable in their own right.

As a boutique winery, we make every cuvée with great care. The domaine's vines are certified organic and HVE4, and we are on the long road to regenerative agriculture. We intervene as little as possible and give our wines time to find their character.

That is why we put most of them on sale only once they are ready to drink. Not every wine is available at every moment; some are held back, others appear later or only in limited numbers.

To the Caprice cuvée

The freedom to make a different wine: an Alvarinho in a few bottles.
This wine stands outside our series. It grows on a single sandy plot at the edge of the wood, the only soil of its kind on the Domaine; the vines have stood there since 2019. In the cellar we work it reductively, in the school of the great white Burgundies – hence the flinty note.
In the glass, struck match and wet stone, with a saline trace; on the palate it stays slender and cool. Most of the bottles we open at the estate, for our guests.

To the Louré cuvée

The loure is a slow Baroque dance, measured and solemn, every step deliberately placed. The Louré carries this character too.

It comes from a single leased plot, almost entirely enclosed by forest, with a thin layer of humus over limestone; it is picked by hand. This Sauvignon Blanc is conceived fuller and more gastronomic, with ripe, many-layered fruit. The long maturation in oval clay amphorae on the fine lees gives it an enveloping, precise texture of great calm and a long life in the bottle.

Its long, harmonious finish makes it a wine for the table – with fish in sauce, poultry or fine cheese. With every glass it shows new facets.

To the Prélude cuvée

The opening: a rosé full of character and saline minerality.
The Prélude opens the rosés of our suite and sets the tone. It is made from Malbec from old vines, fermented directly in large barrique and aged there. The result is a structured, salmon-coloured rosé with real personality that combines a dancing lightness with seriousness.

To the Gigue cuvée

In the classical suite the gigue comes last, a fast, lively dance. With us it opens the red wines.

Merlot and Cabernet from clay and gravel: the Gigue shows juicy cherry, violet and a hint of white pepper, powerful and tannic yet nimble, carried by lively fruit. Up to the 2020 vintage it aged in concrete vats, from 2021 in amphora – a small share of barrique remains in both cases. The sparing use of oak keeps the fruit clear and gives the tannins grip.

To the Sarabande cuvée

Slow, dignified, of quiet complexity – that is how a sarabande sounds, that is how this wine tastes.

In every vintage so far, this cuvée has brought together all of the estate's red varieties. Thanks to Merlot, Cabernet Sauvignon and Malbec, it unfolds flavours of dark berries, cocoa and graphite, underlined by the earthy notes of Cabernet Franc.

16 to 18 months in mostly used barriques lend depth without heaviness. A multifaceted red wine that invites you to pause and gains in complexity over the years.

Structure & Poise – calm, clear, long

To the Allemande cuvée

In Bach's suite, the Allemande stands at the beginning – a calm, ordered movement, dignified and carried by inner tension. In our cellar the Allemande stands at the end: of all our wines it needs the longest time. Both belong together.

Cabernet Sauvignon and Cabernet Franc from the domaine's gravel soils form its backbone. Blackcurrant, graphite and fine spices define the aromatic profile, carried by dense, ripe tannins. For more than 20 months it matures slowly in wooden barrels, gaining power and length without becoming loud.

We make it only in vintages in which the Cabernets reach the necessary depth.
