The Gigue typically concludes a suite – lively and uplifting. In our collection, the Gigue opens the selection of great red wines.

The Gigue presents itself with juicy cherry fruit, violets, and a hint of white pepper. Minimal oak aging preserves its freshness and approachability; polished yet noticeable tannins typically make it ready to drink several years earlier than the Sarabande.

In its younger years, it is the perfect accompaniment to a summer BBQ or a good ragù alla bolognesa, while when it has matured somewhat, it also goes wonderfully with a beautiful duck with honey glaze.

Year description
The year 2018 offered winegrowers in Bordeaux little respite due to the sometimes exceptional weather conditions. Fortunately, the weather from mid-July to the end of September was particularly favorable for the ripening of the grapes and maintaining perfect health throughout the vineyard.

Scientific basis

PRECISION AND METHOD

The Suite's philosophy describes our approach. However, its implementation in the vineyard and cellar follows a clear methodological structure. Our work is rooted in the tradition of modern oenology, as shaped by figures such as Jean Ribereau-Gayon – one of the key founders of scientifically based winemaking and long-time owner of Domaine aux Conseillans.

His research on malolactic fermentation and the systematic integration of chemistry, microbiology, and practical application has decisively shaped today's precise, controlled winemaking methods – including those used here on our estate. Without these foundations, the modern methods we employ would be inconceivable.

We see our work as a continuation of this scientific approach: maturity is assessed, processes are documented, and decisions are made consciously. The suite provides the internal order – oenology supplies the tools.
