The structure of the Suite
Allemande
The measured step of the Suite: a red wine from Cabernet Sauvignon and Cabernet Franc, made only in vintages that can carry it.

A step with weight.
A suite lives from the fact that not all movements share the same tempo. The Gigue leaps, the Sarabande pauses, the Allemande strides: calmly, in even time, every step placed with weight. Our reference is the Allemande from Mozart's Suite in C major, K. 399. In the musical suite the allemande opens the sequence; among our red wines, Allemande deliberately comes last, after Gigue and Sarabande, of equal standing beside them and with the most time.
It is made from Cabernet Sauvignon and Cabernet Franc grown on the gravelly soils of the Domaine, which recall the gravels of Pauillac but in our hands aim at finesse rather than force. We make it only in vintages in which the Cabernets reach the necessary depth, and let it mature slowly in wooden casks for more than 20 months.

A TRIBUTE TO STRUCTURE
Allemande is a cuvée of great architecture that reveals its full harmony only with time.

Cassis, graphite, clear fruit.
Allemande is structured and built around clear fruit, around cassis and graphite. A wine of finesse that never turns loud. When it is ready, it is served at 16 °C after some time in the decanter.
