What we do should be explainable and comprehensible — right down to the parcel and vintage. Almost everything else follows from this: the patience, the restraint in the cellar, the way we arrange the wines.

A suite knows no first or second wine. It knows movements that need and complement each other – each with its own character and tempo. This is precisely how we conceive our Cuvées: from the bright Prélude to the stately Sarabande, closer to the Burgundian concept of Climat than to the classic Bordeaux hierarchy.
A sign to pause.
In music, the fermata holds a note longer than the notation dictates — a deliberate pause. On our label it stands for exactly that: pausing briefly and perceiving before passing judgement. It is a reminder to taste a wine first and speak about it afterwards.
What does "compose instead of produce" mean?
The difference lies in where we start. We begin from what the plot, the vintage and the cellar make possible in that particular year — and not from a target style set in advance or from a market analysis. Every subsequent step follows this first decision. For us the cellar is a workshop where choices are made deliberately, not where tasks are simply processed.
Why do you compare wine to a musical suite?
Because a suite is an interplay. There is no first and no second wine in it, only movements that need one another — from the bright Prélude to the solemn Sarabande. We view our parcels and vintages as closer to the Burgundian "climat" concept than to the classic Bordeaux hierarchy.
