Bordeaux with Cheese: Axes instead of Habit

The standard

An axis-by-axis matching examines ripeness, fat, salt and texture separately instead of setting cheese and wine against each other as two overall impressions.

Criteria

  • Salt intensifies the perception of tannin
  • Fat dampens astringency and carries acidity
  • The ripeness of the cheese weighs more than its variety
  • Rinds with their own flora shift the axes most strongly

Distinction

Cheese ripeness ≠ wine maturity: the two proceed independently, and a pairing is not coherent merely because both have aged. An axis-by-axis matching therefore compares single characteristics rather than setting drinking maturity against the age of the cheese.
