The standard
The measured fermentation curve records sugar breakdown and temperature over time and makes visible whether the course stays even.
Criteria
- Sugar breakdown is recorded over the duration, not only at the end
- Onset, peak and decline are distinguishable
- Deviations from the expected rate become visible early
- Temperature and fermentation rate are considered together
Distinction
Fermentation kinetics ≠ alcoholic fermentation: fermentation is the process, kinetics its temporal shape. Fermentation kinetics ≠ stuck fermentation: a stall is an interruption, while kinetics describes the whole course up to a regular end. The measured fermentation curve thus separates the normal course from its disturbance.
