The standard
A structure-led glassware choice derives the form from the structure of the wine, not from the appellation on the label. Tannin quantity, alcohol level and aroma binding are decisive.
Criteria
- The bowl volume follows the share of bound aromas
- The rim width determines how strongly the alcohol appears on the nose
- The form stays the same across a tasting series, otherwise the comparison is lost
- A glass depicts existing structure and supplies none that is missing
Distinction
Glassware choice ≠ decanting: decanting alters the wine before it is poured, the glass only the conditions of its perception. Glass shape ≠ grape variety assignment: the distinction follows structure, not origin. Where a structure-led glassware choice is missing, the available stock decides the impression.
