The standard

The needs-based nutrient addition derives quantity and timing from the measured assimilable nitrogen, not from a fixed dose. Decisive are the starting level, the course of fermentation and the sugar content at the onset.

Criteria

• The addition follows a measurement of assimilable nitrogen, not a recipe
• Quantity and timing follow the state of fermentation
• Organic and mineral nitrogen are distinguished by effect
• Over-supply remains a risk, not an advantage

Distinction

Yeast nutrients ≠ yeast: the nutrients supply the population, they are not the population itself. Yeast nutrients ≠ the must's assimilable nitrogen: the must brings its own content, and the needs-based nutrient addition only supplements its measured deficit.
