The accounted ionic strength assesses stabilisation measures in the light of all dissolved ions, not by temperature alone or by the concentration of a single salt. Decisive are the total content of charged particles and their influence on the solubility equilibrium.

Criteria

  • The solubility of a salt is judged in the context of all dissolved ions
  • The quantity is measured or calculated, not estimated
  • Its influence on tartrate stability is taken into account
  • It remains a calculated quantity, not a sensory statement

Distinction

Ionic strength ≠ salt content: it counts not the mass but the charge and concentration of all ions. Ionic strength ≠ acidity: the accounted ionic strength captures all charged particles, whereas acidity describes only the titratable acids.
