Colloidal interactions: force, not state
The standard
A described colloidal interaction names which particles attract, which repel and which act protectively. It explains the behaviour of the wine rather than only stating its end state.
Criteria
- Attractive and repulsive forces are distinguished
- Protective colloids are named as such
- The trigger of an aggregation is known
- The force is separated from its visible result
Distinction
Colloidal interactions ≠ colloidal stability: the interactions are the forces, stability is their result. Colloidal interactions ≠ flocculation: flocculation is a possible outcome, not the force that brings it about. A described colloidal interaction names the cause, not the outcome.
