Concentration vs. density: quantity and texture

The standard

Perceived compactness describes how tightly the dissolved substance stands together on the palate, not how much of it is present.

Criteria

• Concentration denotes the amount of dissolved substance per volume
• Density denotes how closed this substance feels
• High concentration does not necessarily produce the impression of density
• Density is a tactile impression, not a measured value

Distinction

Concentration ≠ density: one names the amount of substance, the other its tactile cohesion. Perceived compactness separates the two, because equal amounts of substance can feel differently tight. Density ≠ structure: structure orders the wine along axes, density describes only the tightness of its texture.
