Guided maturation measures oxygen access against the wine's capacity to absorb it, not against a fixed target. What matters is tannin density, fruit substance and the speed at which both bind the oxygen.
Maturation ≠ Oxidation: the same reaction is called maturation as long as the structure binds the oxygen, and oxidation once it exceeds it. Guided maturation draws the line by the dose, not by the substance involved.
