Ripening moment: reached, not chosen

The standard

A reached target ripeness names its basis — the Physiological Ripeness of the berries, measured values or tasting. Without it, the ripening moment is only a calendar date.

Criteria

  • The moment is bound to a state of ripeness, not to a date
  • Its basis — measured or tasted — is named
  • It remains a statement about the fruit, independent of the actual harvest date

Distinction

Ripening moment ≠ Harvest Timing: the ripening moment is reached, the harvest timing chosen — an estate may pick earlier or later than the grapes are ripe. A reached target ripeness describes the fruit, a date only the calendar.
