Drinkability: the pull to the next sip

The standard

A perceived pull describes whether a glass empties faster or slower and traces this back to the balance of the components. Without that reference, drinkability is praise without a ground.

Criteria

  • No single element holds up the sip
  • The acidity carries without turning sharp
  • The alcohol stays in the background
  • The impression repeats across several sips

Distinction

Drinkability ≠ balance: balance is a resting equilibrium, the perceived pull a movement that draws one to drink on. Drinkability ≠ drinking maturity: a wine can be mature and still drink heavily.
