Aging Vessels
A fermentation and aging vessel does not determine how a wine tastes, but rather the conditions under which it matures. Whether wood, concrete, clay, or stainless steel: the choice primarily controls how much oxygen reaches the wine over the months, how stable its temperature remains, and how its texture develops.
The perceptible difference in the glass rarely arises from the material itself, but rather from the processes taking place within it. Understanding this means interpreting a vessel not as a promise of taste, but as a tool with clear physical properties.
Oxygen is the actual adjusting screw
The most important difference between the vessels lies in how much oxygen they release into the wine over time. A new, tightly-grained oak barrel releases roughly twenty to thirty milligrams of oxygen per liter into the wine in the first year, while a barrel that has already been used multiple times releases significantly less. Stainless steel is almost airtight and almost completely excludes oxygen. Concrete falls in between, and clay vessels vary particularly widely depending on the firing temperature and wall thickness: the hotter the clay is fired, the finer the pores and the lower the exchange. These small amounts, distributed over months, also determine how soft tannins become and how smoothly a wine later settles in the bottle.
Why vessels shape texture, not aroma
While new wood actually imparts aromas, such as vanilla, roasted notes, or spice, concrete, stone, and clay remain taste-neutral. Their contribution is haptic: they alter how a wine feels on the palate, and thus its texture. Concrete maintains the tension of a young wine because it stores heat inertly and introduces hardly any aromas; clay allows for gentle micro-oxidation that rounds out tannins without adding woody notes; stainless steel preserves fruit and freshness in their original form.
The impression of austerity or reduction often attributed to amphorae usually does not come from the material itself, but from the work surrounding it: from long lees agingand a restrained sulfuring, which is part of an aging process with minimal intervention. The vessel accompanies these processes; it does not create them.
The vessel is a decision about time
For us, the choice of vessel is part of the aging process, not a statement of style. We don't ask which material is currently considered particularly original, but how much movement a particular wine can tolerate and over what timeframe its structure should be sustained. A wine with a firm framework can utilize the openness of a permeable vessel, while a delicate, fruit-driven wine would quickly be overwhelmed in it.
Seen this way, the comparison between amphora, concrete, wood, and steel is not a hierarchy, but a question of suitability. The vessel creates the framework in which a wine comes into its own; its character already comes from the vineyard and from the decisions made in the cellar.
