METHODE & PRINZIP

Regenerativ denken,
ökologisch handeln

We view the vineyard as a complex ecosystem.

01. DIE GRÜNE ARCHITEKTUR

A vineyard must not be a monoculture. We cultivate active buffer zones, wild hedges, and wildflower strips not as decoration, but as the estate's immune system. These "green corridors" promote beneficial insects that naturally regulate pests. Where the ecosystem balances itself, the winemaker hardly needs to intervene.

02. REGENERATION INSTEAD OF CONSUMPTION

Our goal is to build up humus, not deplete it. Through permanent cover crops and intercropping, we protect the soil from erosion and sequester CO2. We nourish the soil life with compost and tolerate spontaneous vegetation. Living soil is the only way to living wine.

03. DEEP ROOTS & WATER

We don't irrigate. That's the law in Bordeaux, but for us it's a principle. Our vines have to send their roots deep through clay and gravel to reach the natural reservoirs. This "positive stress" forces the plant to produce fewer, but more concentrated, fruits. We protect the area's springs, but we don't use them for winemaking.

4. OBSERVATION AS A METHOD

We only intervene when absolutely necessary. This requires not laziness, but the utmost vigilance. We observe each plot individually to detect disease pressure early and act preventively. For us, plant protection means strengthening the vine's own defenses, rather than chemically suppressing symptoms.

5. THE PATIENCE OF THE HARVEST

We don't harvest according to a calendar, but according to taste. During the crucial phase, we taste the grapes daily to find the point of perfect physiological ripeness – when the seeds are brown and the skins are tender. We're not looking for maximum sugar, but optimal balance.

6. CALM, DEEPNESS AND CLARITY

A relaxed wine cannot be made in a stressful environment. The tranquility of the nature reserve, the health of the soils, and the patience we take in working with nature are reflected in the character of our wines. They are not loud, but profound. They are the liquid echo of this landscape.
