Trust is good...

At Domaine aux Conseillans, one law applies: Living wine can only be created in living soil. But the word "natural" is patient. We wanted proof. That's why we hired the strictest quality inspectors in the world. They are incorruptible. Their name is Apis mellifera .

Our three beehives are idyllically situated between the pond, the small stream, and the wildflower meadow. From a modest 15,000 bees in winter, the population swells to up to 200,000 in the height of summer.

A bee is a biological data collector. Since our property, with its nearly 20 hectares of forest, meadows, and vineyards, offers ample food, our colonies remain "at home." In their search for nectar, they take thousands of tiny samples of our terroir daily. If there were pesticides or chemical residues, the bees would find them.

We didn't just taste the honey, we put it through an interrogation. Instead of the usual standard test (approx. 60 substances), we sent the sample to the specialist laboratory Primoris – one of the world's leading institutions for food safety.

The result (batch 24/044439): No residues detectable.
No glyphosate, no fungicides, no neonicotinoids. Our honey is scientific proof that Domaine aux Conseillans is a genuine nature reserve.

Craftsmanship without compromise

Opening (Spring) +

We harvest the acacia honey at the end of April. It is light, almost transparent, liquid, and has a delicate, floral sweetness.

Crescendo (Summer) +

Honey from our wildflower meadow. Amber in color, richer in texture, with notes of hay and warm herbs.

Final (Autumn) +

A complex late harvest wine. Dark, malty and intense – shaped by the forest edges and late ivy.

A gift of nature – consciously shared

With only about 300 jars produced per year , Miel des Conseillans is a true rarity. We treat it not as a commodity, but as a cultural treasure. Therefore, you won't find this honey in our regular online shop. We distribute the harvest according to two principles:

1. Regional responsibility:
We are proud of our region. A portion of our harvest goes exclusively to local organic cooperatives here in the Gironde. In doing so, we support short supply chains and the community of regional producers.

2. Exclusivity for friends:
The remaining allocation is reserved for our selected private clients, partners in top-tier gastronomy, and members of the Cercle. It's our way of saying "thank you."
