Bitterness: taste, not tannin
The standard
The separate sense attribution assigns each sensation to the sense that carries it: bitterness to taste, the drawing-together to touch. Only this separation makes a description verifiable.
Criteria
- Bitterness is tasted, not felt by touch
- Its source is phenolic compounds, not acidity
- It is kept separate from astringency as its own stimulus
Distinction
Bitterness ≠ astringency: bitterness is a taste on the tongue, astringency a drawing-together of the mucous membrane. Bitterness ≠ acidity: one comes from phenols, the other from acids. The separate sense attribution keeps the two apart.
