Colloidal stability: duration, not moment
The standard
A verified colloidal stability shows that the wine withstands the intended conditions of temperature, time and agitation without haze. It rests on stability tests, not on the mere appearance of clarity.
Criteria
- The colloid types involved are known
- The test covers heat, cold and time
- Clarity is tested for duration, not only at filling
- Interventions are distinguished from natural stability
Distinction
Colloidal stability ≠ momentary clarity: a wine can look clear and still flocculate later. Colloidal stability ≠ filtration: filtration removes particles, it does not prove that no new ones form. A verified colloidal stability measures durability, not the moment.
