Fining: binding, not sieving

The standard

A target-bound fining names, before the addition, the constituent to be removed and the quantity required for it. Both are determined in a trial on the wine itself.

Criteria

• The target is a constituent, not an impression
• The quantity comes from a preliminary trial
• The agent is removed completely
• The collateral loss of substance is accounted for

Distinction

Fining ≠ filtration: there separation is mechanical, here it is chemically bound beforehand. The target-bound fining therefore distinguishes binding from sieving. Every addition removes more than its target.
