Drinking maturity refers to the sensory state of a wine in which structure, acidity, tannins and aromas are so integrated that the wine is understandable without explanatory aids.

Demarcation:

Drinking maturity is not a date or a development potential. It describes perception in the current state and differs from storage potential and the predictive drinking window.

Consequence:

A wine can be suitable for storage but not ready to drink – or ready to drink and yet still capable of further development.
