LaSuite. The Collection.
Wines
At LaSuite aux Conseillans, every wine has a role – just as the individual movements of a musical suite are independent yet only together do they form a whole.
Each of our wines possesses a clearly recognizable, year-spanning character and follows its own movement, embedded in the overall composition of the winery.
We work on a small scale and deliberately in small quantities. Wines are created from several clearly distinguishable terroirs, which are not homogenized but precisely crafted.
This approach is more reminiscent of thinking in terms of Burgundy's climats than the classic Bordeaux logic of first and second wine: each plot, each exposure, sometimes even each barrel is allowed to develop its own expression. In this way, diversity arises not from quantity, but from attention.
As a boutique winery, we craft each cuvée with great care and work organically – with the clear goal of regenerative agriculture . We intervene as little as possible to standardize the process and give our wines time to develop their character.
Therefore, we only release them for sale when they are ready to drink . Not every wine is available at all times; some are held back, others appear later or only in limited quantities.
This attitude shapes our entire range. Our wines are born from patience, precision, and trust in the land. They are an expression of a working method that prioritizes depth over speed – and quality over availability.
Caprice
a white wine made from 100% Alvarinho
Like its musical namesake, our Caprice was born from a creative whim – yet every detail of its vinification is meticulously crafted. Made from 100% Alvarinho grapes planted in 2016 on a small patch of sand at the edge of the forest, it ferments slowly in a glass demijohn and then matures gently on its fine lees.
On the palate, the Caprice surprises with an atypical richness for Alvarinho: salty minerality meets creamy texture, playful fruit meets cool precision. This interplay makes every tasting a joyful yet profound experience – just like a musical caprice, combining virtuoso lightness with masterful discipline.
Because our young Alvarinho plot is only 0.15 hectares in size and therefore yields correspondingly low harvests, we bottle fewer than 100 bottles annually. Caprice is available exclusively at concerts on our estate – a rare treat that we are delighted to share with you when the music begins.
INTERMEZZO
a white wine made from Sauvignon Blanc
"Intermezzo" refers to a musical interlude that often introduces new ideas and stylistic elements. Our Sauvignon Blanc "Intermezzo" is the first wine of this kind at our winery and represents innovation and
A spirit of experimentation. The vines grow on limestone soils and the wine is mainly aged in amphorae, which gives it a mineral, clear structure with intense aromas.
PRELUDE
a rosé with character
Like the opening of a musical suite, Prélude sets the tone for what's to come. A delicate salmon-colored rosé made from 100% Malbec, it opens with aromas of wild strawberry, white peach, and a hint of pink peppercorn. Its fine acidity and saline minerality make it an elegant introduction to the world of La Suite.
A wine that should be drunk cold, it can be enjoyed easily on its own, but also to accompany a BBQ with seafood.
We can only produce Prélude in years when our Malbec plots are full of juice and we can extract a little juice from our Malbec grapes after harvesting for the Prélude.
GIGUE
The Gigue typically concludes a suite – lively and uplifting. In our collection, the Gigue opens the selection of great red wines.
Typically made from 90% Merlot and 10% Cabernet Sauvignon, the Gigue presents itself with juicy cherry fruit, violets, and a hint of white pepper. Minimal oak aging preserves freshness and approachability; polished yet noticeable tannins generally make it ready to drink several years earlier than the Sarabande.
In its younger years, it is the perfect accompaniment to a summer BBQ or a good ragù alla bolognesa, while when it has matured somewhat, it also goes wonderfully with a beautiful duck with honey glaze.
A red wine that prefers to dance rather than march.
SARABAND
Slow, dignified, with quiet complexity – that's how a sarabande sounds, that's how this wine tastes.
This cuvée is the heart of our winery and is made each year from all of our estate's red grape varieties. Thanks to Merlot, Cabernet Sauvignon, and Malbec, it unfolds flavors of dark berries, cocoa, and graphite, underscored by the earthy notes of Cabernet Franc. Typically, 18 months of aging in mostly used barriques lends depth without heaviness. A multi-layered red wine that invites contemplation and gains in complexity with each passing year.
It effortlessly complements a good braised dish and doesn't require a high alcohol content or heavy oak aging. It typically reaches its first drinking window 7-8 years after harvest.
ALLEMANDE
a red wine for an evening by the fireplace
Like the eponymous first movement of a Baroque suite, our Allemande unfolds with serene dignity and sovereign depth. A high proportion of Cabernet Sauvignon lends it dark fruit, finely textured tannins, and remarkable length – a structure that perfectly reflects the celebratory character of the Allemande.
We can only produce our Allemande in those vintages in which our Cabernet Sauvignon reaches exceptional ripeness and aromatic depth.
The average production is 1,000 bottles per year, and it typically goes on sale ten years after the harvest. Club members can receive it en primeur earlier.
It complements any type of high-quality classic cuisine, or can be enjoyed on its own in winter in front of the fireplace.
GIGUE
The Gigue typically concludes a suite – fast, lively, exhilarating. At our winery, the Gigue opens the red wine collection.
Typically made from 90% Merlot and 10% Cabernet Sauvignon, Gigue presents itself with juicy cherry fruit, violets, and a hint of white pepper. Minimal oak aging preserves its freshness and approachability; polished tannins make it the perfect companion to a summer BBQ just a few years after harvest.
A red wine that, served slightly chilled, prefers to dance rather than march.
