Additive and subtractive: two directions
The standard
A declared direction of action states, for each method, whether it adds something to the wine or removes something.
Criteria
- For each method it is stated whether it adds or removes
- Additive substances are named individually
- Subtractive methods name what they remove
- The direction is documented independently of the judgement
Distinction
Additive and subtractive ≠ intervention depth: depth measures the extent, the declared direction of action only whether something is added or removed. Additive and subtractive ≠ low intervention: few interventions can be either, their number says nothing about the direction.
