Storage Conditions: Framework, Not a Property
The standard
A documented storage chain records temperature, humidity, and the exclusion of light over the entire period a wine is in a given custody.
Criteria
- Temperature stays within a narrow, known band over the storage period
- Light is excluded or limited to a documented minimum
- Vibration and storage position are recorded, especially for bottles stored horizontally
- Interruptions in the chain are noted, not passed over
Distinction
Storage conditions ≠ ageing potential: ageing potential is a property of the wine, storage conditions the external circumstances under which it unfolds. Storage conditions ≠ bottle ageing: bottle ageing is the process within the wine, storage conditions its external framework. A documented storage chain makes visible which share of a deviation is attributable to storage.
