Why this wine?
The Caprice is the natural partner to this cream: its saline, flinty minerality takes up the salt cod and the olive oil, its clear acidity holds against the garlic and richness and keeps every bite fresh. Where a soft wine would disappear here, the Alvarinho brings tension and definition.

Tips & insights
- Soak the salt cod generously and change the water several times — this decides its salt and tenderness.
- Work in the oil and milk warm and only little by little, or the emulsion will split.
- Do not purée with a blender or the cream turns gluey — work by hand or briefly with a flat beater.
- Taste before salting: the fish often brings enough salt of its own.
