Why this wine?
Chipirones and the Caprice grew up close in Andalusia, even if one of them found its way to Bordeaux later on: the Alvarinho brings exactly the saline, flinty freshness the just-fried crust needs. The clear acidity cuts through the oil, the minerality takes up the squeeze of lemon — and lets the tender squid still be the star.

Tips & insights
- Pat very dry — residual moisture prevents the crust and makes the oil spatter.
- Really take the oil to 180 to 190 °C: below that the squid turns rubbery and greasy, above it the flour burns.
- Fry in batches so the temperature does not drop.
- Serve at once — chipirones turn rubbery as they cool; here the rule is 'kitchen to guest', not the other way round.
