Structure: The load-bearing frame of a wine

The standard

A named structural axis states which component carries the wine and in what proportion to the others. Without that statement, structure remains a collective word for an impression.

Criteria

  • The three components are named individually, not summed into one impression
  • Their proportion to one another is given, not merely their quantity
  • The statement remains valid when the aroma changes
  • Load-bearing capacity is judged separately from intensity

Distinction

Structure ≠ body: body is perceived mass, structure the arrangement of its carriers. Structure ≠ Texture: texture is the surface of the sensation, the named structural axis its substrate.
