Tartaric acid: origin and role

The standard

A declared acid composition separates the tartaric acid from the wine's other acids, rather than naming a total acidity alone; only this separation makes the acid's origin and stability legible.

Criteria

  • The share of tartaric acid is named separately from malic and lactic acid
  • The statement distinguishes grape-borne from added acid
  • It includes the pH value, not the gram amount alone
  • It remains traceable through fermentation

Distinction

Tartaric acid ≠ total acidity: total acidity sums all acids, the declared acid composition states the tartaric acid on its own. Tartaric acid ≠ tartrate: tartrate is its crystallised salt, not the acid itself.
