Cultured yeasts: control, not a mark of quality
The standard
The controlled fermentation management chooses a strain by its result: fermentation safety, temperature tolerance, a known aroma profile. It buys predictability by giving up the microbial diversity of the place.
Criteria
- The strain is chosen by reproducible behaviour, not by origin
- Its metabolism is described before it is used
- The choice weighs fermentation safety against diversity, without making either a virtue
- The addition is measured in amount and timing
Distinction
Cultured yeasts ≠ spontaneous fermentation: the former deploys a known strain, the latter leaves fermentation to the site's own microflora. Cultured yeasts ≠ alcoholic fermentation: the yeast is the tool, fermentation the process. The controlled fermentation management describes the choice of tool.
