Like its musical namesake, our Caprice was born from a creative whim – yet every detail of its vinification is meticulously crafted. Made from 100% Alvarinho grapes planted in 2016 on a small patch of sand at the edge of the forest, it ferments slowly in a glass demijohn and then matures gently on its fine lees.

On the palate, the Caprice surprises with an atypical richness for Alvarinho: salty minerality meets creamy texture, playful fruit meets cool precision. This interplay makes every tasting a joyful yet profound experience – just like a musical caprice, combining virtuoso lightness with masterful discipline.

Nose
Aromatics: The initial nose is dominated by brioche and wood, with clear notes of toasted bread – an indication of aging in oak barrels.
Without floral notes: The focus is on delicate, woody aromas.

Opening: A fresh start with a fine acidity that invigorates the palate.
Development: The texture becomes rounder and more enveloping, carried by a subtle melt.
Aromas: Toast and wood notes remain present; a honey-like impression is revealed when chewed.

Freshness: Fresh, slightly acidic finish with a delicate brioche note.
Year description
2023 (white): A warm year with successful flowering and fruit set, apart from slightly cooler periods in July. A tropically humid June brought the most severe downy mildew attacks in years; the remainder of the season was characterized by a "season in two halves" with heat spikes at the end of August/beginning of September and an unusually long harvest. The dry white wines are aromatic, precise, and fresh, with good acidity and moderate alcohol.

Scientific basis

PRECISION AND METHOD

The Suite's philosophy describes our approach. However, its implementation in the vineyard and cellar follows a clear methodological structure. Our work is rooted in the tradition of modern oenology, as shaped by figures such as Jean Ribereau-Gayon – one of the key founders of scientifically based winemaking and long-time owner of Domaine aux Conseillans.

His research on malolactic fermentation and the systematic integration of chemistry, microbiology, and practical application has decisively shaped today's precise, controlled winemaking methods – including those used here on our estate. Without these foundations, the modern methods we employ would be inconceivable.

We see our work as a continuation of this scientific approach: maturity is assessed, processes are documented, and decisions are made consciously. The suite provides the internal order – oenology supplies the tools.
