2024 (white): A very wet winter and spring with an early, unusually heavy infestation of downy mildew; persistent dampness characterized the season. Flowering and fruit set suffered in some cases (Coulure/Millerandage), September was cool and wet – overall the smallest harvest since 1991. Nevertheless, the dry white wines often present themselves as aromatic, vibrant and fresh, and rather light in alcohol.

A ripe, multi-layered fruit — yellow fruit and a hint of citrus, with a fine herbal depth. Taut and gastronomic on the palate: a fine, precise texture from the long ageing in oval clay amphorae, carried by fresh acidity and a long, quiet finish. A structured white wine that joins time and food.

Louré is Sauvignon blanc, yet the grape's typical fruit steps back. It shows ripe, many-layered fruit and a fine, precisely built texture of remarkable calm. Louré 2024 matured for eighteen months in clay amphora on its fine lees. A white wine for the table, with a long finish and many years ahead of it.
Why Louré
A measured dance with a marked line.
A suite is a sequence of dances. Each has its own character, and only all together do they make the whole. That is how our estate is built: each cuvée is inspired by a movement of this suite and takes on the character of its form.The louré is a slow French dance, measured and solemn, every step deliberately placed. Bach gave it a movement of its own in his third Partita for violin. Among our white wines, Louré stands in the middle, between Intermezzo and Caprice. It is made for the table rather than the aperitif, and before the meal it is happy to spend an hour in the decanter.
Louré shows that a white wine from Bordeaux may take up space, with texture and calm, without being opulent.

Most of our wines go on sale only once they are ready to drink; until then they mature with us, and we carry the risk.
Composed plot by plot
Each plot is vinified separately; only at the end do we compose the cuvée from them.
Time as an ingredient
Depth takes time. We give the wines the years in barrel and bottle that they need.

The Domaine's vineyards are certified organic and HVE4, set within a 19-hectare ecosystem of woodland, meadows, water and vines.

In the tradition of modern oenology
Aux Conseillans was for decades the Domaine of Jean Ribéreau-Gayon — one of the co-founders of modern oenology, founder of the Institute of Oenology at the University of Bordeaux (1949) and long-time owner of the estate. We work in that tradition: each plot analysed and vinified separately, the ageing guided under control, drinking maturity checked in a blind tasting.

Good to know
When should I drink the Louré?
From release and over many years — a white wine built to age, gaining in expression until around 2040.
How cool should I serve it?
At 14–16 °C — not ice-cold, so that texture and long finish can show. An hour of air does it good.
Is this a light summer white?
No — a full, gastronomic white with texture and stature, aged in clay amphorae. Made for the table, not as an aperitif.
What does it pair with?
With fish in sauce, poultry, veal and fine, mature cheese — dishes with a weight of their own.
Which grape variety is it made from?
100 % Sauvignon blanc, vinified in a full, gastronomic style.
Why clay amphora?
The long ageing in oval clay amphorae lets the lees move naturally and gives an enveloping, precise texture — without oak aroma.
